Sour Cream Baked Potatoes

INGREDIENTS

  • 4 to 6 c. cooked shredded potatoes
  • 1 tsp. salt
  • ½ tsp. pepper
  • ¼ c. onion chopped
  • 2 c. sour cream
  • 1 to 1 ½ c. shredded cheddar cheese

DIRECTIONS

  1. cube the potatoes, and par-boil them until soft enough to shred easily
  2. sauté the onions in butter on medium heat
  3. shred the potatoes (a cheese shredder works well)
  4. mix all of the above ingredients – if it seems dry add a little more sour cream of a bit of milk
  5. grease a baking pan pour in potatoes and cover with foil bake at 350 for one hour.
